
Crack slaw is simply an egg role in a bowl. People just call it crack slaw because it’s so tasty, you can’t stop eating it!

My Keto and Paleo friendly crack slaw recipe is a little different from most because I have the added goodness of MCT oil. This non-gmo MCT oil is sourced from 100% coconut oil and is great for those wanting to boost their healthy fats. I purchased it to help balance out my hormones since saturated fats helps boost cholesterol, which women need in order to balance their hormones. Ingredients:
- 1 lb ground turkey
- 1/2 onion chopped
- 3-4 cups of chopped green cabbage
- 2 carrots, thinly sliced
- 3 cloves crushed garlic
- 4 tablespoons coconut aminos (soy sauce substitute)
- 1/2 inch of fresh ginger (grate)
- 2 tablespoons MCT oil
- 2 green onions
- Opt: sesame seeds and crushed red pepper (garnish)
Directions:
- Brown the ground turkey with the chopped onion in a stir fry sized skillet. Add the crushed garlic, carrots and the coconut aminos when it’s almost cooked.
- Add cabbage and ginger. Put lid pan (if there is one) and let simmer for low for 5 to 10 minutes till cabbage is softened.
- Take off heat, add green onions, MCT oil and garnishes.
This deconstructed egg roll takes less than 30 minutes to make and makes 4 bowls.
